Can We Take A Break From Art And Talk Food For A Moment?

It's hard to do I know, especially if you are the type that considers food preparation an art form as I do. So by taking break from art I just mean switching gears to another art form really.

Having grown up in a household that revolved around the goodness of food I feel very grateful. Prepairing food has the same effect on me as creating art. The thought behind it, the sharing, planning, culture and history of the dishes. The sitting and enjoying it afterwards with family and friends. It's all about living in the moment and enjoying life.

Today I'm prepairing some seafood on my new grill. Yesterday was a tradition Argentine asado and I like to follow that with food from the land with food from the sea. I'm making some fresh octopus on the grill, seasoned with parsley, garlic,olive oil and salt and pepper and fresh lemon. First I boil the octopus for 15 minutes tempering it so that it does'nt go into shock and get tough, also adding several wine bottle corks to the boiling water. Once cooked it's finished off on the grill.

I'm also making Florida pink shrimp and sea scallops grilled, all very mediterranean style. This will be served with grilled pineapple slices and asparagus which will be served over a bed of forbidden rice also know as black lotus rice, once reserved only for the emperor. No meal would be complete without the perfect matched wine, in this case I chose a Red Chilean wine, Malbec by Cassilero Del Diablo.

I am highly allergic to your food. Why? Because I have eaten too much saturated fat in my past.

I am type II diabetic or insulin resistant because of sat fat.

I also think charring the hell out things is a good idea.......but leave that to people who do not mind medical bills for cancer treatments. LOL

Can we talk here?

No, we can not David! Lol I'm trying to build my own appetite which doesn't take much but your making it harder. Look it at this way every thing in moderation that is put on this earth, even if the doctors tell you is bad for you, is really good for you. This is extremely healthy food, lets start with that. :-) Got to go check on the grill...........................

i would rethink that idea...

Approximately 200 people die from anaphylaxis each year in the USA from food allergic reactions.

i have a friend who has the following condition:


Mayo Clinic. 2003

The kiss of death: a severe allergic reaction to a shellfish induced by a good-night kiss.

True (IgE-mediated) allergic reactions to crustaceans are relatively common and can be serious. A young woman with a clinical history of multiple urticarial reactions after touching shrimp and lobster dishes was seen in an emergency department of a Mayo Clinic-affiliated hospital for an anaphylactic reaction that developed immediately after she kissed her boyfriend. The boyfriend had eaten several shrimp just before the kiss. It is important to warn susceptible patients that food does not actually have to be eaten to trigger an allergic reaction; touching the offending food and kissing or touching someone who has recently eaten the food can be enough to cause a major reaction.


That said... last night i satisfied my carnivore sweet-spot with a slow cooked lamb shank in a rich red wine sauce... yum!

It must be Friday, because Mario is cooking!

The drastic allergies that some have to shellfish is disconcerting. So glad I am not allergic, because I do like shellfish, although I don't eat any other type of meat. Mario, are you serious that you can boil an octopus slowly and it won't go into shock? Now, that is really disturbing, lol. Sorry, but you mentioned it.

Well Ed I didn't say food is perfect, like all great art it has it's flaws which in some aspects makes it more interesting, not the part about people dying of allergic shock of course.

Patricia, Friday it is. Lol!

I just made this short film especially to address the subject, hope you enjoy, hope it makes you hungry. Believe it or not I cooked this entire meal for Alina and I and we almost polished it all off, still had a little left over for a snack tomorrow. :-)




Btw, it was Soooo Good! All that awaits to complete this wonderful meal is the Cafe Cubano which Alina is making as I speak, smells awesome!

David, grilling is not cooking with the flame, grilling is cooking with the heat of the flame, the flame is what usually causes the charring which is not good for you, notice the grill marks and no charring on my grilling items.

Hmmm... Mario, your flaming image of the grill at the top, has what looks to me like a dog's head on the right side.

K L that looks like my dog Buddy, that image is old Buddy was probably on the porch with me and there is a window next to the grill which may have caused the image of the dog to reflect on the flames. I'm always seeing faces in things, I don't know how I missed this one. Lol!

Looks great! I grill just about all the stuff you have, except the octopus, hard to get here in Orlando area and difficult to cook or not to over cook. Back in the day, we would go clamming up in New Jersey, and get those little "cherrystones" and open them, put a pat of butter and garlic and some cocktail sauce on them and then onto the grill. When the butter boiled, we would slurp them down! Amazing food when fresh like that!

I grill shrimp sometimes, but mostly boil. I get the big 16-20's and with the heads off, but still shelled, boil them in Old Bay Shrimp boil, bust open the bag of spices, boil them and then when done, pour out the hot water and throw a can of cheap beer in and let them steam a minute or two and then eat them hot! Cocktail sauce has to be hot, spicey hot and with fresh lemon mixed in, with the horseradish, perfect! Keep the shrimp recipe just between us, okay......

Rich, your shrimp recipe sounds crazy good. It's true with octopus cooking it properly is essential, the saying goes cook it for 30 minutes or cook it for 3 hours, it's temperamental that way. The secret Sicilian weapon is the wine bottle corks put into the boiling water with the octopus, something about the wine tannins that are rumored to act as a tenderizier of sorts.

Ricardo, the raw weight of the octupus before cleaning and cooking was close to 6 pounds, we almost ate the whole amount among just two of us.

Octopus doesn't seem to be the effort! Expensive here and I can eat a whole lot of shrimp instead, for the same price! LOL!

I only paid like $2.49 per pound for it at the fish market. I can't even buy bait shrimp for that price. Lol!
